Even some half-nonsense explanation would be fine by me 'the animal can hear the high pitched whine of a CCTV camera and avoids them' or 'these night cameras use infrared to illuminate the area, the animal can see in infrared and perceives it as a bright light and avoids it'. A horror film about a big cat (or maybe like a velociraptor or some genetically engineered monster) evading detection for an unusually long time could work great - if they showed us how the animal was actually being sneaky, and they had the characters call it out and offer some kind of explanation.
